ZARA'S CHOCOLATES GIN TRUFFLES
We love collaborating with other local independent producers in a variety of fields and like all other local chocoholics, we are massive fans of Zara’s Chocolates!
We have previously been inspired by her products for ‘Distillers Table-CHOCOLATE’ and love tasting what the talented team create from each of our seasonal recipes throughout the year.
Here Zara lets us behind the scenes on her process in creating the latest Spring Gin Truffle with ‘Freyja’.
Process:
On looking at the botanicals in the 'Freyja', and smelling the aromas, we immediately felt an urge to trial the gin with a frangipan style filling, to pair with the apricot and orange blossom notes. We felt like a lighter, sweeter take for Spring this time with our gin truffle, a change from our stronger boozy, fruity pairings we've done previously.
Grinding up some freshly toasted almonds to make a smooth nut paste, we then paired this with a white chocolate, and some organic orange oil for a sweet frangipan-style filling.
This on it's own was delicious, but would it work with the gin? We tend to work with dark chocolate when showcasing the clean flavours in alcohols, so whilst we wanted to bring some additional sweetness to this chocolate with a white, almond filling, we felt that the gin layer needed to be in dark chocolate, to add contrast and a cleaner flavour, if this was to work.
On trialing our almond filling with a delicious dark chocolate from Madagascar, we thought we might be onto a good combo. This chocolate pairs well with nuts and coffee, but also carries a distinct fruitiness, so we decided it should work well for also bringing forward the fruity botanicals in the gin.
A sample ganache made with the gin and Madagascan chocolate, proved pretty delicious and boozy; and when trialed in combination with the almond filling, the flavours all worked together to give a complex fruity, boozy, frangipan vibe. We were ready to go ahead and turn this into a real product!
